Sweet Potato Fries

Eric and I LOVE sweet potato fries. These have a spicy kick to them and are great dipped in ketchup.

Sweet potatoes
Olive Oil
Red Cayenne Pepper

Preheat oven to 400. Cover pan with foil for easy clean up.

Slice potatoes so they are shaped like a potato chip. I like them as thinly sliced as possible. Place sliced potatoes in a large bowl. Dowse them with a good bit of olive oil, salt and red cayenne pepper. Don't be shy - this is what makes them tasty! Be sure to toss the fries so each one gets covered.

Lay slices onto the pan without overlapping too much. Cook for 20 minutes, flip potatoes and cook for 20 minutes more. If you like them crispy, broil them for a few minutes before pulling them out of the oven. Serve with ketchup.
