7-Layer Chocolate Fudge Cake!

Cake Mix
5 raw Eggs
1 stick Butter
1 cup Buttermilk
2 cups Sugar
1 cup Crisco Oil
2 cup Self-rising flour
1-½ tsp. Vanilla

Grease and flour seven 9-inch cake pans.
Beat the eggs. Add sugar, butter, oil, vanilla, flour and buttermilk. Beat
between each ingredient. Pour the batter equally into the seven pans.
Bake at 350 until done (about 8-10 minutes). Have all seven layers baked
and ready before you prepare the chocolate icing.


ICING
4 cups Sugar
4 squares Bakers Unsweetened Chocolate
1 cup Stick Butter (prefer Land O Lakes salted)
1 cup Milk
1 tsp. Vanilla

Put all ingredients (except vanilla) in a pan. Stir over medium heat until dissolved.
Bring to a boil and cook for 2 minutes, then remove from heat. Add vanilla and
stir. Prepare kitchen sink with about 3” of water and ice cubes. Lower pan of
chocolate into the icy water, and beat until the icing becomes thick, but not to thick
to pour. Immediately apply the icing to the layers; icing firms up as it cools.

Madi's Nachos

Baked Tostitos Scoops
Shredded cheese
1 can yellow corn
1 can black beans
3 Tbsp. sweet jalapenos
Salsa

Pour Tostitos on a cookie sheet, top with cheese and bake on 300 degrees until hot.
In a sauce pan heat the corn, beans and sweet jalapenos together.
Top heated chips with the corn mix, salsa and eat.

Sausage and Gravy Biscuits


1/2 lb. Hot Ziegler's sausage roll
1/4 cup All purpose flour
2 1/2 cups milk
salt & pepper to taste
1 can of 8 large biscuits

Serves 4 people

Crumble and cook sausage in large skillet over medium heat until browned. Stir in flour until dissolved. Gradually stir in milk. Cook gravy until thick and bubbly. Season with salt and pepper. Serve over hot biscuits. Refrigerate leftovers.

Sopapilla Cheesecake

This is a delicious dessert one of our friends made us the other night!!

1 (8 oz) package cream cheese, softened
1 cup sugar
1 tsp vanilla extract
2 (8 oz) cans refrigerated crescent rolls
1/2 cup melted butter
1/2 cup sugar
1 tsp ground cinnamon

Preheat oven to 350°. Prepare 9x13 in baking dish with cooking spray. Beat the cream cheese with 1 cup sugar and 1 tsp. vanilla extract in a bowl until smooth; set aside.
Unroll the cans of crescent roll dough. Leave in rectangle sheet form, do not separate. Press one sheet of crescent roll into bottom of baking dish. Evenly spread the cream cheese mixture over crescent layer. Then cover with the remaining sheet of crescent dough, and brush with melted butter. Stir together 1/2 cup sugar with the cinnamon in small bowl, and sprinkle evenly over the top of cheesecake.
Bake 30 mins until puffed and golden brown. Allow 10 mins to cool before serving.

Macaroni Bake with Ham and Peppers

Don't let the long list of ingredients scare you! This recipe is easy and tasty, great for a family sized meal or if you want leftovers.

1 lb elbow macaroni
1 Tbsp olive oil
1 Tbsp minced garlic
1 red bell pepper
1 (14.5 oz) can chopped tomatoes
9 oz smoked ham, diced
3 Tbsp chicken stock
2 tsp dried oregano
1 Cup bread crumbs
3 Tbsp grated parmesean
2 Tbsp butter, melted
2 Cups spaghetti sauce

Preheat oven to 400. Cook macaroni noodles as directed and drain.

Meanwhile, heat oil in a saucepan. Add garlic and red bell pepper and cook for about 5 minutes until softened. Add the tomatoes, ham, chicken stock and oregano and simmer for about 3 minutes. Add all to the macaroni, stir, and season with salt and pepper.

Pour spaghetti sauce into a large baking dish and spread evenly. Add the macaroni mixture to the top of the sauce. Mix the bread crumbs, parmesean and butter and sprinkly on top.

Place on a baking sheet and bake for about 15-20 minutes or until golden brown and bubbly.

Mexican Baked Chicken and Rice

I got this recipe from my good friend at work, Stephanie Hill. It is so easy and very tasty. Enjoy!

4 Chicken Breasts
Cumin
Oregano
Garlic Salt
Pepper
1 can Corn (drained)
1 can Black Beans (drained)
Your favorite Salsa

Rice
Lime Juice
Cilantro

Preheat oven to 375. Use olive oil to barely line a baking dish. Sprinkle cumin, oregano, garlic salt and pepper on each chicken breast to your liking. Lay all chicken breasts in the baking dish. Poor entire can of corn and entire can of black beans over chicken. Pour desired amount of salsa over chicken (at least enough to cover chicken). Bake chicken for roughly 30 minutes or until cooked thoroughly.

While chicken is baking, fix rice, adding lime juice to your water. When complete, add chopped cilantro leaves to your rice. Serve with baked chicken. Healthy and surprisingly flavorful!

Mom's Peanut Clusters

My mom makes this dessert in the crock pot. It is perfect for taking to party's or family gatherings. Hits the spot if you are wanting something sweet and salty.

1 (16 oz) Planters Dry Roasted Peanuts, salted
1 (16 oz) Planters Dry Roasted Peanuts, unsalted
2 pkgs chocolate almond bark
1 (12 oz) bag semi-sweet chocolate chips
1 bar Bakers german chocolate
2 tsp vanilla flavoring

Place all ingredients (minus vanilla) in a crock pot in the order listed above. **Do not stir!!** Cook on low for 2 hours. After 2 hours, stir to thoroughly mix the peanuts. Turn the crock pot off and then add the vanilla flavoring and stir. Drop onto wax paper about the size of a ping-pong ball. Allow to cool and eat. Yum!
